A traditional cinnamon-raisin sourdough loaf where the tang brightens the warm spice instead of competing with it.

Ingredients
  

  • 1 cup active starter
  • cups all-purpose flour 190g
  • 1 cup whole wheat flour 125g
  • ½ cup warm water
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 2 tablespoons softened butter
  • 2 teaspoons cinnamon
  • 3 tablespoons brown sugar
  • ¾ cup raisins

Method
 

  1. Mix starter, flours, water, honey, salt, and butter into a dough and let it rise.
  2. Flatten the risen dough and scatter cinnamon, brown sugar, and raisins across the surface.
  3. Roll tightly and place in a loaf pan.
  4. Let rise 4-6 hours at room temperature, then bake at 375F (190C) for 35-40 minutes.
