The simplest sourdough recipe on the list, no rise time, no oven, ready in under fifteen minutes.

Ingredients
  

  • ½ cup sourdough discard
  • 1 cup all-purpose flour
  • ¼ cup water
  • 1 tablespoon olive oil
  • ½ teaspoon salt

Method
 

  1. Knead briefly, two to three minutes, until a smooth dough forms.
  2. Divide into 4 equal pieces and roll each paper-thin.
  3. Cook directly in a dry cast iron skillet over high heat, about 90 seconds per side, until charred spots appear.
