Used in Amish and broader European folk medicine for centuries — modern research is finally catching up to what these communities have known all along.
Ingredients
- 1 cup dried organic elderberries (about 140g)
- 3 cups filtered water (about 700ml)
- 1 cinnamon stick, 4 whole cloves, 1 tablespoon fresh grated ginger
- 1 cup raw local honey (about 340g)
Method
- Combine berries, water, cinnamon, cloves, and ginger in a saucepan. Bring to a boil, then reduce and simmer about 45 minutes until reduced by half.
- Strain through cheesecloth, squeezing out all the juice.
- Let cool to lukewarm (important — heat destroys honey’s beneficial enzymes), then stir in the honey.
- Pour into bottles and refrigerate.
A tablespoon daily for adults, a teaspoon for children, especially heading into cold and flu season.
