A leftover ham bone and a bag of dried navy beans shouldn’t produce something this good, but Amish cooks have been proving otherwise for generations.
Ingredients
- 1 leftover ham bone with some meat attached
- 1 lb dried navy beans, soaked
- Water to cover, salt and pepper to taste
Method
- Put the ham bone and soaked beans in a big pot, cover with water.
- Simmer for hours, until the meat falls off the bone and the beans turn creamy.
- Mash some of the beans against the side of the pot to thicken the broth naturally, no flour or cream needed.
Dried beans are one of the cheapest proteins available — combined with a ham bone otherwise headed for the trash, this feeds a family for next to nothing.
