Water Kefir

One of the most valuable fermentation cultures you can own, and most people have never heard of it — gluten-free, dairy-free, and suitable for kids.

Ingredients

  • 1/4 cup cane sugar, dissolved in 4 cups filtered water (about 50g sugar to 1 liter water)
  • 2 to 4 tablespoons water kefir grains

Method

  1. Dissolve sugar in water, then add water kefir grains.
  2. Cover with a cloth and ferment 24 to 48 hours.
  3. Strain out the grains, bottle the liquid, and refrigerate.

The grains multiply and can be reused indefinitely — a single starter culture produces probiotic beverages for years, at almost zero cost per serving.
