Fermented Honey Lemonade

As close to magic as fermentation gets — no starter culture needed, just time and ingredients most households already have.

Ingredients

  • 1/4 cup raw honey (about 85g)
  • Juice of 3 lemons
  • 4 cups filtered water (about 1 liter)
  • Pinch of sea salt

Method

  1. Combine honey, lemon juice, and water. Stir well.
  2. Pour into a quart mason jar, add a pinch of salt.
  3. Cover loosely with a cloth and leave at room temperature 2 to 3 days.

The wild yeasts in raw honey activate and the liquid begins to bubble gently — within two days you have a naturally fizzy, lightly sweet, refreshing drink.
