Amish Dinner Rolls

Ingredients

  • Enriched yeast dough: flour, milk, butter, egg, sugar, yeast, salt
  • Melted butter, for brushing

Method

  1. Mix and knead an enriched yeast dough, keeping it slightly tacky — resist adding extra flour.
  2. Let rise until doubled.
  3. Shape by pulling and tucking the dough into tight balls for surface tension, giving smooth round tops.
  4. Proof until puffy, then bake in a hot oven until golden.
  5. Brush with melted butter the moment they come out.
