Meatloaf gets unfairly dismissed until someone makes it properly — glazed with a sweet-tangy caramelized ketchup topping and kept moist with a panade.
Ingredients
- 2 lbs ground beef
- 1 cup breadcrumbs soaked in 1/2 cup milk (the panade)
- 1 egg, diced onion, salt and pepper
- Glaze: 1/2 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon mustard
Method
- Combine beef, soaked breadcrumbs, egg, onion, salt, and pepper. Mix gently — overworking makes it tough.
- Shape into a loaf in a baking dish.
- Combine glaze ingredients and spread over the top.
- Bake at 350°F for about 1 hour, until the top caramelizes into a sticky, glossy shell.
The panade — breadcrumbs soaked in milk before mixing in — is what traps moisture so the inside never dries out.
