Custard Pie

The pie that separates experienced bakers from beginners — Amish women have made it perfectly for generations without measuring a single ingredient.

Ingredients

  • 1 partially blind-baked 9-inch pie crust
  • 4 eggs
  • 2 cups milk
  • 2/3 cup sugar
  • 1 teaspoon vanilla
  • Freshly grated nutmeg

Method

  1. Whisk eggs, milk, sugar, and vanilla together.
  2. Pour into the partially blind-baked crust and grate fresh nutmeg over the top.
  3. Bake on the lowest oven rack at 350°F until the filling trembles like silk when shaken gently — about 40 minutes. Do not overbake, or it turns rubbery as it cools.

Freshly grated nutmeg is not optional here — it gives a fragrance pre-ground powder from a jar can’t match.
