The Three Categories of Home Cheese

Fresh cheeses

Farmer’s cheese, cottage cheese, ricotta — made and eaten within days. No aging, no pressing, no special equipment. This is where every beginner starts.

Soft and semi-soft cheeses

Mozzarella and similar cheeses require a bit more technique and sometimes rennet, but they’re still very accessible in a home kitchen.

Hard and aged cheeses

Colby, cheddar, and pressed wheels require pressing, aging, and waxing or rind care. These are what fill the root cellar and feed a family through winter.
