Ingredients
- Basic yeast dough: flour, water, yeast, butter, sugar, salt
- 4 cups water
- 1/3 cup baking soda, for the bath
- Coarse pretzel salt
Method
- Mix and knead the dough, then let it rise until doubled.
- Divide and roll into ropes, then twist into the classic pretzel shape.
- Bring water and baking soda to a boil, and dip each pretzel briefly before baking.
- Sprinkle with coarse salt and bake until deeply golden brown.
Serve warm with mustard or cheese sauce. The baking soda bath is what gives them that distinctive color and glossy chew.
