Amish White Bread

Two golden domed loaves with a soft, cottony crumb, made with the simplest ingredients — no starters, no overnight proofs, honest bread in under three hours.

Ingredients

  • Flour, water, yeast, a little sugar, salt, and oil

Method

  1. Mix and knead by hand for 8 to 10 minutes — the dough should go from shaggy and sticky to smooth and elastic.
  2. Let rise until doubled, shape into two loaves, and proof in loaf pans.
  3. Bake until golden and hollow-sounding when tapped.

The small amount of oil and sugar keeps the bread soft for days with no preservatives — what commercial bakeries do with chemicals, this recipe does with two tablespoons of oil.
