Firm vs. Soft Curds: The Temperature Secret

Temperature is the single variable that separates beginner cheesemakers from confident ones — and most beginners run it too hot, too fast.

The rule

  • Add acid to milk around 86°F (30°C) for soft, spreadable curds — perfect for cottage or farmer’s cheese.
  • Add rennet to milk held at 88 to 90°F (31 to 32°C) for a firm, clean curd that holds its shape when cut.
  • Raise milk temperature slowly — fast heat creates uneven curd.

As the Amish say, cheese cannot be rushed. Food scientists agree — they just use more Latin to say it.
