Strawberry Jam — The Sweet Tradition

Probably the single most beloved preserved food in Amish homes — it shows up at every community breakfast and church supper.

Ingredients

  • 5 cups crushed fresh ripe strawberries (about 700g)
  • 7 cups sugar (about 1,400g)
  • 1 box powdered pectin

Method

  1. Combine strawberries, sugar, and pectin in a large pot.
  2. Bring to a rolling boil, stirring constantly, and boil hard exactly 1 minute.
  3. Ladle into sterilized half-pint jars, leaving 1/4-inch headspace.
  4. Process in a boiling water bath for 10 minutes.

Makes eight to nine jars. For less sugar, low-sugar pectin and raw honey work as a substitute with a slightly different but equally good flavor.
