Dandelion Flower Kvass

Almost everyone already has the ingredients for this one growing in the yard right now.

Ingredients

  • 2 cups loosely packed fresh dandelion flowers, yellow and fully open (about 470ml)
  • 1 tablespoon raw honey
  • Pinch of sea salt
  • Filtered water, to fill a quart jar

Method

  1. Add dandelion flowers to a quart mason jar.
  2. Fill with filtered water, add honey and salt.
  3. Cover loosely with a cloth or coffee filter. Ferment on the counter 2 to 4 days.

Floral, slightly sweet, lightly fizzy, and full of naturally occurring bacteria from the flowers — turn the dandelions you’d have mowed over into something your family actually asks for.
