Hollandaise Sauce

It has a reputation for being temperamental, but with the right method it comes together in under ten minutes using four egg yolks.

Ingredients

  • 4 egg yolks
  • 2 tablespoons cold water
  • 1 tablespoon lemon juice, plus more to taste
  • 1/2 cup warm melted butter (1 stick)
  • Salt and white pepper

Method

  1. Place yolks, water, and lemon juice in a heatproof bowl over barely simmering water (bowl shouldn’t touch the water).
  2. Whisk constantly until thickened and lightened in color, 3 to 4 minutes — they should fall from the whisk in ribbons.
  3. Remove from heat and slowly drizzle in warm melted butter, whisking constantly.
  4. Season with salt, white pepper, and more lemon juice.

Classic over eggs Benedict, but just as good over steamed asparagus or roasted vegetables.
