Most whole wheat bread has a reputation for being dense and dry. The Amish version, half whole wheat and half bread flour, completely destroys that reputation.
Ingredients
- 1.5 cups whole wheat flour, 1.5 cups bread flour
- 1/3 cup honey, replacing sugar
- 1 tablespoon vital wheat gluten (the secret weapon)
- Yeast, water, salt, oil
Method
- Combine flours with the vital wheat gluten, yeast, and salt.
- Mix in honey, water, and oil to form a smooth dough. Knead until elastic.
- Let rise until doubled, shape into a loaf, and proof again.
- Bake until golden and hollow-sounding when tapped.
The vital wheat gluten gives this loaf enough structure to rival a professional bakery — tender but substantial, gentle enough for toast, strong enough for a loaded sandwich.
